Lemon Cookies

These cookies here are my first attempt at the culinary arts and I made up my own recipe. (well I truly took half of one recipe and half of another and combined them.) I have to say they turned out really good. (disclaimer: a lot of this recipe is to taste I didn't use exact measurements, just make sure you don't add too much lemon juice or the cookies will turn into a carmelized mess on your cookie sheet. And the filling will need to be poured instead of spread:)cookie

1/2 cup confectioners sugar

1/2 cup butter

1 cup flour

1/4 t. salt

1/4 t. baking soda

2-3 T. lemon juice

Lemon zest to taste

Bake @ 350 for 10-15 min. let cool then chill.

filling

1/2 cube cream cheese (softened)

confectioners sugar to taste

Lemon juice to taste (but not too much because you will make the filling runny)

Lemon zest to taste

mix all together and spread on cookie and sandwich with another cookie.

I really liked them cold, but they're good room temperature.
