Fruit Crisp-
This recipe can be made using many different types of fruits or combination of fruits. Favorites for crisps are apples in the fall, strawberries in the spring, and peaches in the summer.
5-6 cups of fruit, cut into chunks {I used Costco’s frozen berry blend and just filled my 9x9 almost to the top}
Sweetener-honey, maple syrup, agave nectar or sugar (adjust the amount depending on the sweetness of the fruit. For example, when using sweet apples you can omit altogether, but with something like rhubarb you will want to use 1/2 {rhubarb??? really}
2-3 tbsp corn starch or arrowroot
Place fruit into a 9x9 baking dish (or 9x12 depending on amount of fruit) and mix in remaining ingredients. Set aside.
Topping Ingredients
1/3 cup firmly packed brown sugar
1/2 cup butter
1/3 cup flour {I’m gluten-free so I used gluten-free flour}
1 tsp. cinnamon
1 1/2 cup rolled oats {again gluten-free}
Directions: Preheat oven to 350. In a pot, melt the butter over low heat. Add the sugar and stir together. Add the remaining ingredients and mix well. Crumble evenly over the fruit. Bake for 40-45 min until golden on top. Let cool for 10 minutes. Serve and enjoy!
{And this is how I did it.
Take frozen berries and put them in a pan. I then added 3 tbsp cornstarch/cold water mixture to berries and brought them to a boil until berries were more like a sauce, but be careful not to squish the raspberries and black berries too much because then all you have are the blue berries to chew on…personally, not a huge fan.
Then I put the hot berries in the 9x9 covered and put them in the fridge for the morning.
I then microwaved the butter added sugar, stirred, added the rest of the ingredients except for the oats, I didn’t want them to turn into oatmeal, and set aside for the morning. Then when the morning came I preheated the oven to 350 melted the butter mixture a bit added the oats and put the oat mixture on top of the fruit and cooked it for about 20-25 minutes.
It took me three tries to “perfect” it
The first time it was too runny, the second time I used too much cornstarch, and the oat mixture turned to oat meal because I put it on top of the fruit the night before, but you know what they say third time’s a charm! or three strikes your out.}
